Macallan whisky from the Speyside district of the Scottish Highlands is one of the five most popular single malts in the world. Certain aspects of its production are unique: the malt is prepared from one sort of barley only – Golden Promise and the crystal-clear water comes only from the Ringorm mountain spring; the spirit is distilled in what are almost the lowest stills in the world which makes the drink fairly strong and full of aromas; and the ageing process takes place exclusively in sherry casks, except in the case of the Macallan Fine Oak, where the whisky is also aged in bourbon casks. This combination of American and Spanish oak gives the whisky its particular sophistication and smoothness. The top of the line is the Macallan Fine Oak 30 y.o., which should have matured for a minimum of 30 years. It is pale gold in colour and saturated with the heady fragrances of exotic plants through which one periodically senses the aromas of citrus fruits. But its rich taste does not muffle the variety of the nuances, which make themselves felt one after the other. Thus the palate of the Macallan Fine Oak 30 y.o. opens with the bright flavours of macadamia nut and vanilla, which give way to pastel hints of sandalwood and black cherry that are barely perceptible. And then, having given the taste buds a mass of impressions, the whisky departs leaving a soft, silky aftertaste. |
